China is effectively the world’s ginger supply, out of Shandong, and it ships every month of the year. The harvest is an autumn one and the new crop is the event — fresh ginger from about November, then stored ginger carrying the rest of the year until the next lift. So the calendar below is a quality calendar rather than an availability one: what changes through the year is how old the rhizome in the box is, not whether there is one.
Ginger is chilling-sensitive, which catches people out because it looks like a root vegetable and gets loaded like one. Run it much below about 12°C and it pits and goes translucent, so it does not belong at a potato or an onion setpoint even though it keeps for as long as either. On a mixed load, that is the decision worth checking before the door closes.

Shandong lifts ginger in October and November, so fresh new-crop rhizome ships from about November through the winter and stored ginger carries the rest of the year. There is no month without Chinese ginger; there are months in which all of it is a year old.
