Egypt’s potato window exists for one reason: it arrives while European stores from last season are emptying and before the new European crop is lifted. The harvest runs through the Northern Hemisphere late winter and spring and the fruit is on a vessel within days.

Potatoes are the least fragile cargo on this whole calendar — they store for months and tolerate a wide temperature band — so the risk here is commercial rather than technical. A shipment that lands three weeks late lands into a market that has already been supplied by somebody else’s new crop.
