Nectarines and peaches are the clearest two-hemisphere programme on this calendar. Spain is the European summer’s own stone fruit — Aragón, Catalonia and Murcia, from about June to September — and Chile fills the opposite half of the year, roughly November to March. Between them there is no month with no nectarine in it.

Stone fruit is picked at a ripeness chosen for the journey, and the two origins are shipping to very different journeys. Most of Spain’s moves by truck; Chile’s spends four weeks at sea, which is where the difference between a 2°C and a 5°C setpoint stops being a detail and starts being a claim.
